The function of this thermo switch is to turn off the AC Compressor if the engine coolant temperature is getting too high.
The cut off point occurs of the coolant reaches 216-220F, and it will allow current to pass again when the temperatures are back down to 214F.
Also sometimes called "Radiator fan switch."
